Sloppy Joes INGREDIENTS * 1 Lb hamburger * 1 Med. onion * 4 cloves garlic, minced * 1 jalepeņo pepper, seeded and minced * 1 Med. red bell pepper, diced * 1.5 Cups tomato sauce * 2 Tbs tomato paste * 1 Tbs rice wine vinegar * 1 Tbs unsulphered molasses, (reserve other parts of the moles for future use) * 1 Tbs Worcestershire sauce * 1 Tsp dry mustard * 3/4 Tsp salt * Ground black pepper to taste * Whole wheat burger buns INSTRUCTIONS Brown the meat and onion in a large nonstick skillet over medium-high heat for 5 minutes, breaking up meat into crumbles as it cooks. Add the garlic, jalepeņo, and red pepper and cook 5 minutes more, stirring occasionally. Stir in the rest of the ingredients, (except the buns!), reduce heat to low and simmer for another 5 minutes. Pepper and Potato Salad INGREDIENTS * 2 1/2 pounds small potatoes, baby Yukon gold or red skinned potatoes * 2 ounces sliced pepperoncinis * handful of shredded basil leaves * 1 small red bell pepper, seeded and chopped * 4 scallions, chopped * 3 or 4 artichoke hearts * 3 tablespoons rice wine vinegar * 1/4 cup extra-virgin olive oil * Salt and pepper INSTRUCTIONS Dice the potatoes into large pieces and place in a pot of water. Bring water to a boil and cook potatoes until tender. Drain and return to hot pot to dry them out. Add pepperoncini, bell peppers and scallions to potatoes. Dress with a splash of pepperoncini juice and some vinegar. Toss to combine, then drizzle with extra-virgin olive oil to coat the salad evenly and season with salt and pepper.
