Easy Blueberry Syrup
- 1 cup sugar
- 2 TBSP. cornstarch
- 1 cup water
- 2 cups fresh blueberries 1 teasp. fresh lemon juice
- mix sugar and the cornstarch in a 2 quart sauce pan.
- gradually add the water
- stir in the blueberries and lemon juice
- heat to boiling over high heat.
- stir constantly
- boil and stir for 1 minute or until it starts to thicken
- serve warm over pancakes or cake
